Brasserie Manager Simon Fraser
A Scotsman himself through and through, Simon has been working in the industry since the age of 14 where he started as a breakfast waiter at the Craiglockhart Guest House, Portree Harbour on the beautiful Isle of Skye.
Eventually heading to Edinburgh Simon joined the exclusive Royal Yacht Britannia, Leith as the Assistant Fine Dining Manager where he meticulously prepared and serviced some of the UK’s most prestigious events.
Going from strength to strength Simon went on to become the Assistant Manager of the Michelin Star Restaurant Number One, Edinburgh where he was nominated for and won the Scottish Hotel Awards ‘Rising Star – Restaurant Manager of the Year’ 2008.
Simon joined the North Bridge Brasserie at a very exciting time, bringing with him vast range of food and beverage knowledge and a true passion for customer service.
Most memorable dining experience – Only open for two weeks each summer and set in a vineyard under a 13th century cathedral. It is a perfect expression of fresh, local, seasonal food cooked simply to fully express the natural flavours. La Vinola- Barga, Tuscany, Italy.

Fritto Misto and Cote Rôtie, but never together....
